Oysters at their plump, creamy best

Oysters thrive in cold water, which is why they’re at their peak during winter. Although they’re good to eat in the autumn and spring, they’re at their full-flavoured, meaty best from April through to December, which is when we harvest and sell our live naturally caught Pacific Mahurangi oysters.

January to March is the time when oysters grow and recover after mating, so we leave them in their beds. We don’t sell naturally caught Mahurangi oysters during the summer months. But to keep oyster enthusiasts happy, we sell hatchery-grown triploid oysters instead. These little beauties do not mate over summer and come from stock that is faster growing.
